SERVES: Makes approx. 10 cookies

A great treat for the kids after school or as an extra in their lunchbox AND a great option for a wee treat with your afternoon tea.

Some lovely spices that not only taste great but are super healthy for you.


  • 1 cup of almond butter
  • ¼ cup of honey
  • 1 egg
  • 2 Tbsp. coconut flour
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • 1 tsp finely ground rock salt
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger
  • Half an apple, peeled and finely diced


  1. Preheat oven to 180 C. Line a baking tray with baking paper.
  2. In a large bowl, mix the almond butter, honey and egg with a hand mixer.
  3. Add in the coconut flour, baking soda, cinnamon, salt, cloves and ginger and blend to combine.
  4. Spoon about 1 tablespoon of mixture on to the baking sheet and continue until you have 10 separate cookies.
  5. Mould the mixture to form circles and pat down lightly with your fingertips so the top is nice and level. Make sure you leave a little room around each cookie as they spread when cooking.
  6. Bake for 8 – 12 minutes, until set.
  7. Let cool, then transfer to a wire rack to cool completely.

NOTE – the mixture can be a little sticky when forming them in to shape on the baking tray – this is normal.
