Coconut and Walnut Muesli

SERVES: 1

You can warm the yoghurt mix gently by placing container in a bowl of hot water and once warmed pour over if desired.

INGREDIENTS

MUESLI MIX INGREDIENTS:

  • 1/4 cup walnuts
  • 1 Tbsp. pumpkin seeds
  • 1 Tbsp. almond flakes
  • 1 Tbsp. sunflower seeds

YOGHURT MIX INGREDIENTS:

  • 1/3 cup coconut yoghurt
  • 1/4 tsp cinnamon
  • Dash of chilli powder if desired
  • 1 tsp chia seeds

INSTRUCTIONS

  1. Mix the walnuts, pumpkin seeds, almond flakes and sunflower seeds in a small breakfast bowl.
  2. In a small separate bowl, mix the coconut yoghurt, cinnamon, chilli powder and chia seeds together and let sit for a moment for the chia to swell.
  3. Spoon the yoghurt mix on top of the muesli mix and stir to combine.
